Chai Tea

2 - 3 quarts water
20 whole cloves
20 whole green cardamom pods crushed
20 whole black peppercorns
8 whole cinnamon sticks
8 - 10 slices of fresh ginger root
1 or 2 black tea or green tea bags
Milk and honey

Bring to a boil Simmer gently for one hour.
Then steep one or two black tea bags in for 5 minutes, and then remove the tea bags.
Let the tea sit for 2-3 hours or overnight depending on how strong you like it.
Strain the tea and discard the solid spices.
Serve hot. When serving, add milk and honey to taste.
Store the leftover tea in a glass container in the refrigerator.
Keep in mind you should always change the amounts to suit your taste!
